  • Cooks - Advanced

    The Advanced Cook is an advanced skill level position responsible for preparing meals and following establishment recipes including preparing ingredients, adhering to restaurant menu, and following food health and safety procedures. Cook, clean, assist other cooks and staff and deliver quality food in a fast-paced environment. Work may include operating a grill, oven, or fryer.


  • Kitchen Supervisor

    The Kitchen Supervisor will assist in coordination and efficient kitchen operation, with emphasis on food ordering, kitchen production, sanitation, and training. In addition, this position supports in food preparation, cooking, storing, labeling, checking food temperatures, organizing coolers, placing/receiving orders, prep lists, recipes, and specs.

    The Food & Beverage Manager oversees day to day operations of The Grand Hotel Food and Beverage Department.

  • Assistant Kitchen Manager

    Food & Beverage
    $20.19 / hour

    The Assistant Kitchen Manager assists in oversight of the Grand Hotel kitchen operation, which may include leadership functions, food preparation functions, sanitization, food handling, procurement, financial planning, and menu development.

  • Restaurant Supervisor

    Food & Beverage

    This is a floor supervisory position that requires coordination between staffing and business levels assisting where necessary to accommodate guest service.


    Duties & Responsibilities:                          

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Effective enforcement of all Xanterra Tusayan, LLC F&B standards, policies and procedures.
    • Support F&B Training programs as assigned.
    • Comply with all state laws and company policies regarding alcohol.
    • Ensure proper accounting procedures are enforced for checkouts, voids, comps, special event billing, tours and resumes.
    • Support all FOH activities in food and beverage outlets.
    • Ensure all guest/employee challenges and complaints are handled in a professional manner.
    • Continually operate all facilities to maximize food, beverage, labor and operational costs within budget.
    • Ensure staff members are in pressed and clean uniforms with their nametags.
    • Support participation in updating attendance cards for all employees.
    • Ensure dining room facilities are maintained and clean.
    • Report all maintenance requests to extension 1030 and notify other managers.
    • Enforce all side work duties to be assigned and completed.
    • Administer disciplinary actions fairly and consistently working with Operations Manager, General Manager and/or Human Resources.
    • Conduct Service Briefings daily before shifts.
    • Check to ensure all indoor and outside signage is correct and clean.
    • Communicate with other Service Managers and Unit Managers on a regular basis after a shift.
    • Complete Accident Reports thoroughly and communicates with the Risk Manager ASAP.
    • Knows proper evacuation procedures and executes in an efficient, timely manner.
    • Other duties assigned.


  • Retail Associate

    Join our friendly retail team and provide visitors with unforgettable service! Xanterra operates a retail outlet at The Grand Hotel. You will provide top-notch hospitality and welcome guests into gift shops representing the sheer beauty, peace, and scenic grandeur of where you work. We don't sell souvenirs, we sell memories!


    Responsibilities & Duties

    • Provides superior customer service and uses good communication skills.
    • Handles the sale of retail purchases in the gift shop.
    • Performs cashiering duties properly, recording the sales in the register accurately, and following correct accounting procedures.


    • Knowledge of Grand Canyon National Park and surrounding areas.
    • Previous retail and/or experience operating a POS/cash register, handling and/or counting cash accurately, and maintaining proper sales records and reports.
  • Dining Room Host

    Food and Beverage
    $12.85 / hour

    Greet the dining room guests and seat them in an expedient fashion while maintaining a proper seating flow in the seating sections.



    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Greet the guests as they approach the podium and make them feel welcome to the dining room.
    • Seat the guest(s) as quickly as possible or if table is not immediately available accurately informing the guest(s) of how long the wait period will be.
    • Keep the seating chart current and seat guests in a proper flow in the sections so as to not over seat any sections.
    • Keep menus clean and presentable and discard any menus that are too worn or tattered.
    • Be knowledgeable with all dining room floor sections.
    • Report any guest complaints and/or issues immediately to the Service Manager or Unit Manager.  Respond to such in a professional, sincere manner.
    • Complete opening and closing side duties according to dining room standards.
    • Maintain seating log to ensure accurate cover count for the seating period.
    • Assist servers as needed to clear and set tables.
    • Be knowledgeable and follow Xanterra Tusayan, LLC phone etiquette policy.
    • Other duties as assigned.


    Minimum Qualifications:

    • Must be at least 16 years of age.

    Preferred Qualifications:

    • Previous front-of-the-house experience as a Server, Cashier, Host, or Expeditor.
    • Knowledge of food sanitation programs and policies.

    Basic Competencies:

    • High-level guest service skills.
    • Verbal comprehension (Understand oral and written communications, follow detailed directions).
    • Communication skills (provide clear instructions/directions)
    • Reasoning skills (problem-solving and troubleshooting skills)
    • Basic math skills.

    Employment Conditions:

    • Work safely to prevent on-the-job accidents and injuries.
    • Work in inclement restaurant conditions.
    • Work safely to ensure company equipment is secure.
    • Wear protective equipment as required by the job duties.
    • Complete required alcohol awareness and food safety certifications.
    • Work hours may include a nonstandard workweek, overtime, and various shift work as needed.


    Physical Requirements:

    While performing the duties of this job, the employee is:

    • Constantly standing, walking, twisting, using eye/hand coordination, manual dexterity, handling, wrist motion, bending/ stooping.
    • Frequently carrying, bending, stooping, lifting, pushing, and pulling items weighing up to 10lbs.
    • Occasionally carrying, bending, stooping, lifting, pushing, and pulling items weighing up to 50lbs.
    • Constantly listening, hearing, seeing, and speaking.
    • Will be required to stand and walk for long periods of time on cement floors and to walk on uneven surfaces occasionally.

  • Assistant Restaurant Manager

    Food and Beverage

    The Assistant Restaurant Manager is responsible to assist with floor supervision and oversee the daily dining and beverage outlet operations. This includes all aspects of guest service, cleanliness of the restaurant facilities and building employee relationships. In addition, this position supports the Restaurant Manager with advanced administrative responsibilities including using Kronos, accurately logging invoices; tracking uniform usage and overseeing all food outlet supplies.



    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Responsible for effective enforcement of all Xanterra Tusayan, LLC food and beverage hospitality standards, procedures, policies and environmental program.
    • Responsible for assisting in overseeing the daily operation of all dining outlets to maximize profitability, minimize legal liability and conform to the regulations of Coconino Health Department and Arizona Liquor Laws.
    • Responsible for compliance with all health and safety regulations and enforcing sanitary practices for food handling, general cleanliness, and maintenance of dining and food service areas. Responsible for reporting all maintenance repair requests in a timely manner.
    • Support F&B training requirements by scheduling staff and assist in conducting assigned classes. Review tracking of front-of-house (FOH) staff to be in compliance with TIPS and Arizona Liquor Law.
    • Working with the Restaurant Manager, reviews and monitors expenditures to ensure that business unit(s) conforms to budget limitations. Records daily sales and labor costs on the “Actuals” spreadsheet to monitor labor costs.
    • Works with (BOH) Manager for the efficient buffet set-up, maintenance and breakdown in accordance with current timetable. Following staffing guides for FOH and sets up sections for the meal period.
    • Works with Restaurant Manager, make necessary adjustments based on staffing absences and last minute changes such; as increase in bus counts.
    • Conducts daily “Service Briefings” and training staff: proper evacuation procedures and how to execute plan timely, wine and beer selections, etc.
    • Ensure all guest complaints (food quality and service) and employee’s concerns/issues are investigated, resolved, and handled professionally; follow up with Restaurant Manager and Operations Manager.
    • Perform periodic walk-through in the dining room and business unit(s); working closely with all BOH Managers to look at all areas of food service to ensure food quality, consistency, presentation, cleanliness and safety is maintained. Participate in quarterly F&B audits to determine areas and/or processes which may have opportunities for improvement.
    • Responsible for completing accident reports thoroughly and communicating with the Risk Manager as soon as possible, following-up with the Restaurant Manager and General Manager and/or Operations Manager.
    • Ensure staff members adhere to all grooming and uniform standards; meeting the appearance standards as outlined in the Xanterra Tusayan, LLC Employees Handbook and departmental guidelines.
    • Ensure proper accounting procedures are in place and are enforced for check outs, voids, comps, spec sheets special event billing and tours. Under direction of Restaurant Manager, responsible for FOH general invoices, coding; and tracking for non-foods and beverage.
    • Ensure all side work duties are assigned, enforced and completed. Under direction of Restaurant Manager, ensure all side work duties are communicated with all staff employees.
    • Works with Restaurant Manager and HR to administer disciplinary actions fairly and consistently with the approval of General Manager and/or Operations Manager.
    • Under direction of Restaurant Manager, responsible for reviewing and daily approval of all FOH employees through Kronos.
    • Works with restaurant to place liquor, wine & beer orders in a timely manner.
    • Follow up daily on the Company environmental programs ensuring adherence to the recycle program and education of staff employees.
    • Other duties as assigned.


    • Previous one-year food service management or supervisory experience with a thorough knowledge of food and beverage industry.
    • Must have a good working knowledge of Microsoft Office software programs (Word and Excel, Outlook).
    • Bachelor of Science degree in hotel/restaurant management is desirable. Will consider a combination of practical experience and education as an alternative.
    • Bi-lingual (English/Spanish) language skills preferred.
