    Job Summary:
    All levels of cooks to work in the hotel restaurant. Responsible for assisting in all back-of-house meal preparation and following established guidelines. Adherence to food health and safety guidelines is a critical part of this position.

    Responsibilities

    • Responsible for the quality, food safety/sanitation, and timeliness of dishes served.
    • Ensure consistency in techniques to be used for proper food preparation, portioning, and plating as outlined in recipes, product rotation, and mise en place.
    • Prepares a variety of food items using knives, electric mixers, ovens, fryers, gas stoves, griddles, and broilers.

    Qualifications

    • Line Cook I
      • At least 1 year of previous cooking experience in high-volume a la carte or batch production settings, including prep, pantry, and dish tasks.
      • Thorough knowledge and experience with all stations and equipment in the kitchen.
      • Ability to produce items to standard following written and oral directions on menu recipe(s).
      • Ability to pass ServeSafe HACCP food sanitation course.
      • Ability to carry out duties on any station in the kitchen.
      • Safe and proficient knife handling skills, with knowledge of various cutting styles.
      • Good verbal communication skills and ability to train personnel in basic cooking techniques.
    • Line Cook II
      • At least 6 months previous cooking experience on different line stations or batch cooking experience in high volume kitchens.
      • Basic knowledge of all production areas of the kitchen.
      • Safe and proficient knife handling skills, with knowledge of various cutting styles.
      • Knowledge of ServeSafe HACCP food sanitation program with ability to apply necessary portions of program.
    • Line Cook III
      • Previous kitchen experience with some cooking experience on a line station or batch cooking.
      • Basic knowledge of the production areas of the kitchen and equipment such as slicers, steamers, and kettles.
      • Safe and proficient knife handling skills.
      • Basic knowledge of ServeSafe HACCP food sanitation program with ability to apply necessary portions of program.
    • All cooks must be available for evening shifts, weekends, and holidays.

    Physical Requirements include:

    • Constantly carry 10-20 Lbs;

    Responsibilities

    • Fully understand and support Xanterra Mission Statement and Core Values.

    • Under direction of Kitchen Manager and/or Assistant Kitchen Manager, work closely with the Steward to continually train in all aspects of the kitchen.
    • Apply thorough knowledge of food preparation, including organization of daily menu production with the focus of maintaining food quality, spec consistency and buffet/plate presentation.
    • Other duties as assigned.

    Qualifications

    • Must be at least 18 years of age or older.
    • Two (2) years previous supervisory or lead cook experience in a high volume ala carte dining or institutional establishment with progressive cooking/menu development with the ability to train employees in all kitchen positions; with a goal of advancing staff within the kitchen.
    • Prior experience with food production records, scheduling employees and inventory/cost controls.

    Physical Requirements include:

    Frequently: Standing, walking, handling, reaching outward & above shoulder, kneeling/squatting, and bending.

    Must be able to lift & carry up to 20 lbs constantly, up to 50 lbs frequently, and 51-100 lbs occasionally.

    Responsibilities

    Responsibilities

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Continually focus on providing exceptional guest service as a primary goal, both in how work is conducted and when interacting with guests.
    • Complete general maintenance assigned maintenance requests, ensuring timely completion, thoroughness, and cost effectiveness.
    • Performs pool maintenance maintains county pool maintenance license.
    • Handle multiple callouts or work orders, work independently and perform trade call outs as necessary.
    • Operate designated heavy equipment safely and efficiently as necessary and directed.
    • Perform second level maintenance and repairs as related to the preventive maintenance program.
    • Ability to perform second level trade functions such as electrical motor trouble shooting to 220 volts, plumbing, refrigeration/HVAC, basic boiler operation and kitchen equipment repair.
    • Ensures all repairs involving electrical, plumbing, carpentry, HVAC, and other repairs must adhere to current building codes and regulations.
    • Perform Lock Out / Tag Out Procedures
    • Perform basic carpentry and painting duties as necessary and directed.
    • Report maintenance problems in an accurate fashion that require trade specific skill and attention.
    • Maintenance personnel must proactively seek out and report any safety issues regarding electrical, plumbing, HVAC, so that proper repairs can be made.
    • Performs monthly inspections including fire extinguisher, emergency lights, and eye wash stations.
    • Adhere to all safety, risk management and environmental policies and procedures.
    • Wear all required personal protective equipment in carrying out assigned tasks.
    • Work various shifts as required.
    • Adhere to all prescribed Company, statutory/regulatory policies and procedures.
    • Other duties as assigned.

    Qualifications

    • Must possess a valid/clear Arizona Driver’s License, and be able to comply with the Xanterra Tusayan, LLC Company Vehicle Policy.
    • Must be willing and able to acquire CPO Certification within 30 days of employment.

    Preferred Qualifications:

    • Minimum one year’s experience in general building maintenance, or in trades such as electrical, refrigeration, plumbing, etc.
    • Competent in all areas of the General Maintenance III position

    Physical Requirements include:

    Constantly stand, walk, work in inclement weather, and work non-standard workweek, overtime, varying shifts, and call out coverage.

    Frequently lifting and carrying up to 10 lbs..

    Responsibilities

    • Focus on continually providing Legendary Hospitality to guests while maximizing profitability.
    • Ensure adherence for self, and all assigned staff, to all prescribed Company, statutory/regulatory policies, and procedures such as Hospitality Standards, Sustainability, and Health & Safety (EHS) etc.

    Qualifications

    • Three years’ supervisory experience overseeing a staff of at least 10 employees in a high-demand / high-paced dining establishment.
    • Experience in quality food production, records, scheduling and training employees in all kitchen stations and exposure to inventory/cost controls.
    • Must have excellent time management and administrative/office organizational skills. The ability to maintain flexibility in carrying out daily job duties and manage multiple priorities / tasks while providing leadership to a diversified staff.
    • Excellent computer software skills in basic systems such as Microsoft Office software programs (Word and Excel) and the ability to gain functional skills in all other software for the success of this position such as Kronos, CloudSuite and other proprietary software/spreadsheets.

    Responsibilities

    • Continually focus on providing exceptional guest service as a primary goal, both in how work is conducted and when interacting with guests.
    • Provide prompt, efficient and courteous beverage service to guests ensuring proper mixology, portion control and content information to guests.
    • Practice full alcohol awareness as to the levels of guest alcohol consumption and make decisions as to continued service and consumption.
    • When necessary courteously and discreetly (as possible) cut-off guests from further service and consumption of alcoholic beverages.
    • Strictly enforce ID compliance to ensure legal age requirements for service and consumption are met.
    • Make sure bar operation is set up and ready to open on time.

    Qualifications

    • Must be at least 18 years of age or older to be able to legally serve and sell alcohol beverages in the state of Arizona.
