    Job Summary:

    Responsibilities

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Focus on always providing exceptional quality of service to guests while maximizing profitability, both in how work is conducted and when interacting with guests.
    • Ensure adherence for self, and all assigned staff, to all prescribed Company, statutory/regulatory policies, and procedures.
    • Support F&B Training programs as assigned.
    • Comply with all state laws and company policies regarding alcohol.
    • Ensure proper accounting procedures are enforced for check outs, voids, comps, special event billing, tours and resumes.
    • Support all FOH activities in food and beverage outlets.
    • Ensure all guest/employee challenges and complaints are handled in a professional manner.
    • Continually operate all facilities to maximize food, beverage, labor and operational costs within budget.
    • Ensure staff members are in pressed and clean uniform with their name tag.
    • Support participation in updating attendance cards for all employees.
    • Ensure dining room facilities are maintained and clean.
    • Enforce all side work duties are assigned and completed.
    • Administer disciplinary actions fairly and consistently working with Operations Manager, General Manager and/or Human Resources.
    • Conduct Service Briefings daily before shifts.
    • Communicate with other Service Managers and Unit Manager on a regular basis after a shift.
    • Other duties assigned.

    Qualifications

    • Must be at least 18 years of age or older to be able to legally serve and sell alcohol beverages in the state of Arizona.
    • Knowledge of food and beverage service acquired through at least 6 months’ previous experience in food service management.
    • Basic knowledge of Word & Excel software.

    Physical Requirements include:

    Constantly: stand and walk, lift/carry up to 10 lbs.

    Frequently: lift/carry up to 20 lbs., and push/pull up to 25 lbs.

    Job Summary:

    Responsibilities

    • Support F&B Corporate Xanterra University, TIPS & Serv-Safe classes by scheduling staff and assist in conducting assigned classes. Perform and review tracking of front of house (FOH) staff to be in compliance with TIPS and Arizona Liquor Law and other departmental training requirements.
    • Under the direction of the General Manager and working with the Operations Manager, reviews and monitors expenditures to ensure that business unit(s) conforms to budget limitations. Records daily sales and labor costs on the “Actuals” spreadsheet to monitor labor costs.
    • Co-responsible with back of house (BOH) Manager for the efficient buffet set-up, maintenance, and breakdown in accordance with current timetable. Following staffing guides for FOH and sets up sections for the meal period. Working with the Operations Manager, make necessary adjustments based on staffing absences and last-minute changes such as an increase in bus counts.
    • Under direction of the Operations Manager, responsible for conducting daily “Service Briefings” and training staff: proper evacuation procedures and how to execute plan timely, wine and beer selections, etc.
    • Ensure all guest complaints (food quality and service) and employees’ concerns/issues are investigated, resolved, and managed in a professional manner; follow up with Operations Manager.
    • Perform periodic walk-through in the dining room and business unit(s); working closely with all BOH Managers to look at all areas of food service to ensure food quality, consistency, presentation, cleanliness and safety is maintained. Participate in quarterly F&B audits to determine areas and/or processes which may have opportunities for improvement.
    • Other duties as assigned.

    Qualifications

    • Previous food service management experience with a thorough knowledge of food and beverage industry.
    • Employment is contingent upon successful certification by Serv-Safe & Coconino Health Department and TIPS Certification.
    • Must have a good working knowledge of Microsoft Office software programs (Word and Excel) to communicate effectively; to approve Dayforce and enter comps and voids when necessary.
    • Must have good organizational skills with the ability to maintain flexibility in carrying out daily job duties, organize and manage multiple priorities and tasks while providing leadership to a diversified staff.
    • Must possess good leadership and communication skills to effectively motivate staff to the expected Xanterra Tusayan, LLC standard of excellence in guest service.

    Job Summary:

    Responsibilities

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Continually focus on providing exceptional guest service as a primary goal, both in how work is conducted and when interacting with guests.
    • Set tables according house standards and meal period placements.
    • Clear finished tables in an expedient manner.
    • Clear set tables of excess settings after guests have been seated.
    • Clean area around assigned section throughout the seating period.
    • Take dirty used dishes to the dish station and breakdown according to standards for the Kitchen Utility personnel to wash.
    • Assist the Servers as needed and/or assigned by the Service Manager.
    • Bring any guest complaint(s) or issue(s) to the immediate attention of the Service Manager or Unit Manager.
    • When necessary notify the Host/Hostess of vacant tables ready for setting and number of settings needed.
    • Complete opening and closing side duties to standard, and assist other Bussers and/or Servers with side duties as needed.
    • Become familiar with dining room menus to properly answer any guest questions regarding such.
    • Adhere to all prescribed Company, statutory/regulatory policies, and procedures.
    • Other duties as assigned.

    Qualifications

    Previous restaurant experience preferred.

    Physical Requirements include:

    Constantly: Stand, walk, and lift/carry up to 10 lbs.,

    Frequently: Handling and reaching outward, lift/carry up to 20 lbs., and push/pull up to 12 lbs.,

    Occasionally: Sit, reach above shoulder, squat/kneel, bend, lift/carry up to 50 lbs., and push/pull up to 100 lbs.

    Responsibilities

    • Clean assigned guest accommodations to Company standards (within allocated time period) including making beds, cleaning bathrooms, dusting, amenities, removing dirty linens, cleaning outside guest rooms, in hallways and surrounding grounds.
    • Control all keys, master, and guest room keys, and maintain security of guest rooms, both vacant and occupied.
    • Strictly follow standards in cleaning stay over rooms in dealing with guest’s property.
    • Follow instructions given by the Inspector, Supervisor or Management regarding having to return to the room to correct any discrepancies.
    • Strictly follow all lost and found procedures. Immediately report lost and found items to the Inspector, Supervisor or Management.
    • Report any maintenance related problems to the Inspector, Supervisor or Management immediately.
    • Stock cart neatly and safely, according to standards as instructed.
    • Follow instructions on the use of all chemicals and cleaning agents.
    • Practice and adhere to environmental and risk management procedures, including recycling and morning stretch to ensure a safe working environment. Report any safety problems immediately to your supervisors.
    • Wear the required personal protective equipment while performing tasks.
    • Effectively performs tasks without close supervision.
    • Other duties as assigned.

    Qualifications

    • Knowledge of rooms and hotel layout of The Grand Hotel property, including general knowledge of available services with the ability to convey information to the guests.

    Physical Requirements include:

    • Constantly listening, hearing, seeing, standing, walking, using eye/hand coordination, handling, reaching outward and using wrist motion.
    • Reaching above shoulder, bending, lift or carry up to 20 lbs.
    • Occasionally sit, climb, crawl, squat or kneel, lift/carry and push or pull up to 75lbs.
    • Will be required to stand long periods of time and to occasionally walk up flights of stairs.
