  • Kitchen Staff

    Food and Beverage
    Tusayan

    These positions are responsible for preparing meals and following establishment recipes to include; preparing ingredients, adhering to restaurant menu, and following food health and safety procedures. Cook, clean, assist other cooks and staff, and deliver quality food in a fast-paced environment. Work includes operating a grill, oven, and fryer.


    Responsibilities

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Prepare plated, batch and banquet menu items in accordance to established recipes and standards.
    • Prepare menu items maintaining proper portion control for all items, presentation and cooked to proper temperature.
    • Follow prep guidelines to limit over production.
    • Set up and break down work stations and production areas according to assigned shift duties.
    • Maintain County HACCP food sanitation standards throughout all areas and steps of food production.
    • Work any station in the prep area or in the kitchen as assigned by the Kitchen Manager or Supervisor
    • Communicate with Kitchen Staff on production problems, “86’d” items or items dragging.
    • Practice safety in knife handling, equipment operation, lifting, working with open flame and all other areas of food production.
    • Use proper product rotation of perishable items practicing first in first out method of use.
    • Maintain professional communication with front of the house staff and co-workers.
    • Ensure quality control of all items prepped and/or cooked.
    • Adhere to all sanitation, safety, risk management and environmental policies.
    • Other duties as assigned.

    Qualifications

    Minimum Qualifications:

    • Must be at least 18 years of age or older.
    • At least one year previous cooking experience in a high volume ala carte or batch production setting.
    • Knowledge of food sanitation regulations with ability to apply these regulations while on the job.

    Preferred Qualifications:

    • Bilingual (English/ Spanish) skills are desired to effectively communicate with all staff.

    Skills

    • Experience handling food orders in a timely, skillfully and confident.
    • Intermediate knife skills.
    • Flexible approach, based on business demand, and able to work varying working hours.
    • Experience working with various stations in the kitchen (broiler, flat top, and steamer).

  • Dining Room Host - Part time

    Food and Beverage
    Tusayan

    Please note: Part time positions like this one don't qualify for company housing.

    Greet the dining room guests and seat them in an expedient fashion while maintaining a proper seating flow in the seating sections.
    Responsibilities
     

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Greet the guests as they approach the podium and make them feel welcome to the dining room.
    • Seat the guest(s) as quickly as possible or if table is not immediately available accurately informing the guest(s) of how long the wait period will be.
    • Keep the seating chart current and seat guests in a proper flow in the sections so as to not over seat any sections.
    • Keep menus clean and presentable and discard any menus that are too worn or tattered.
    • Be knowledgeable with all dining room floor sections.
    • Report any guest complaints and/or issues immediately to the Service Manager or Unit Manager.  Respond to such in a professional, sincere manner.
    • Complete opening and closing side duties according to dining room standards.
    • Maintain seating log to ensure accurate cover count for the seating period.
    • Assist servers as needed to clear and set tables.
    • Be knowledgeable and follow Xanterra Tusayan, LLC phone etiquette policy.
    • Other duties as assigned.

    Qualifications

    Minimum Qualifications:

    • Must be at least 16 years of age.

    Preferred Qualifications:

    • Previous front of the house experience as a Server, Cashier, Host, or Expeditor.

  • Hotel Front Desk Agent

    The Guest Service Agent professionally greets and welcomes guests upon entrance, provides high level service while ensuring smooth guest registration, checkout, accurately collects payment and provide property information to the guests.
    Responsibilities
     

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Follows all established front desk procedures in carrying out assigned duties.
    • Provides high level service while registering guests in a prompt, efficient and courteous manner.
    • Handle guest accounts properly including posting of charges, and collection of payment.
    • Maintain strict guest security in controlling keys, issuing keys, and divulging guest information.
    • Knowledgeable of property information (hours of operations, activities, etc.) and provide accurate information of Grand Canyon National Park and surrounding areas to guests inquires.
    • Responsible to receive a guest’s request or complaint; own it and follow up to verify the request or problem has been resolved to the guest’s satisfaction; involve the supervisor as necessary.
    • Work closely with Housekeeping department to keep status of rooms current and up to date.
    • Book out of park tours for guests as requested, based on availability.
    • Work with Bell staff to assist guests with requests as needed.
    • Adhere to all Xanterra Tusayan, LLC lost and found procedures.
    • Maintain bank with accuracy and security; close out at end of shift bank, balance and deposit.
    • Ability to shift priorities and duties as directed by supervisor.

    Minimum Qualifications:

    • Previous experience in a guest facing position, such as front desk or concierge with money handling responsibilities.
    • Experience with computers and Windows type software.

  • Dining Room Supervisor

    This is a floor supervisory position that requires coordination between staffing and business levels assisting where necessary to accommodate guest service.
    Responsibilities

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Effective enforcement of all Xanterra Tusayan, LLC F&B standards, policies and procedures.
    • Support F&B Training programs as assigned.
    • Comply with all state laws and company policies regarding alcohol.
    • Ensure proper accounting procedures are enforced for check outs, voids, comps, special event billing, tours and resumes.
    • Support all FOH activities in food and beverage outlets.
    • Ensure all guest/employee challenges and complaints are handled in a professional manner.
    • Continually operate all facilities to maximize food, beverage, labor and operational costs
    • within budget.
    • Ensure staff members are in pressed and clean uniform with their nametag.
    • Support participation in updating attendance cards for all employees.
    • Ensure dining room facilities are maintained and clean.
    • Enforce all side work duties are assigned and completed.
    • Administer disciplinary actions fairly and consistently working with Operations Manager, General Manager and/or Human Resources.
    • Conduct Service Briefings daily before shifts.

    • Complete Accident Reports thoroughly and communicate with the Risk Manager ASAP.

    Minimum Qualifications:

    • Must be at least 18 years of age or older to be able to legally serve and sell alcohol beverages in the state of Arizona.

    Preferred Qualifications:

    • Knowledge of food and beverage service acquired through at least 6 months previous experience in food service management

  • Seasonal Kitchen Supervisor

    Seasonal full time: March- August.

    The Kitchen Supervisor is responsible to assist in coordination and efficient kitchen operation, with emphasis on food ordering, kitchen production, sanitation and training. In addition, this position supports in food preparation, cooking, storing, labeling, checking food temperatures, organizing coolers, placing/receiving orders, prep lists, recipes, and specs.
    Responsibilities   

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Responsible for assisting in overseeing the overall food production in the kitchen at The Grand Hotel Food and Beverage outlets. Ensures maximize profitability, minimize legal liability and conforms to the regulations of Coconino Health Department.
    • Responsible for effective enforcement of all Xanterra Tusayan, LLC F&B hospitality standards, procedures, policies and environmental program.
    • Responsible for proper food handling, such as; preventing cross contamination, proper temperature controls, thawing & holding. Maintain and review temperature logs on a daily basis; monitor temperatures of hot foot placed on the buffet. Discard those items found to be in the danger zone and record on waste sheets provided by Kitchen Manager.
    • Enforces sanitary practices and compliance for food handling, wearing personal protective equipment, general cleanliness, and maintenance of food service areas and dining.
    • Co-responsible for all food production in accordance with recipes or standards.
    • Co-responsible for creating and maintaining a positive working relationship with Coconino Public Health Department and acting with vigilance in any areas dealing with concerns of public health.
    • Must have a full understanding of company policies to be able to objectively observe and evaluate work performance of all employees on staff to ensure compliance, while providing a safe and healthy work environment.
    • Must communicate with other F&B Managers regarding guests’ concerns or complaints, employees’ issues and/or concerns; maintenance repair needs; and suggestions for improvement on the efficiency and operation of the restaurant and business unit(s). Must accommodate our guests in the most professional manner possible.
    • Ensure all guest complaints (food quality and quantity and ticket times) and employee concerns/issues are investigated, resolved and handled in a professional manner; follow up with Kitchen Manager , Operations Manager of General Manager.
    • In absence of Kitchen Manager, responsible for coaching and mentoring staff to a level of acceptable work performance. When necessary, confer with Kitchen Manager, Operations Manager and General Manger to provide the necessary written documentation for an employee’s evaluation, corrective action reports.
    • Responsible for conducting daily “Service Briefings” and training staff: proper evacuation procedures and how to execute plan timely, SDS location and comprehension, Environmental Health & Safety (EHS) procedures, etc. Ensure staff is aware of any staffing issues, special events or equipment issues.
    • Ensure that staff is adhering and in compliance with all prescribed Company, statutory/regulatory policies and procedures regarding worker safety (OSHA) and risk management.

    The Restaurant Manager is responsible for floor supervision and oversight of the daily dining and beverage outlet operations. This includes all aspects of guest service, cleanliness of the restaurant facilities and building employee relationships. In addition, this position supports the Restaurant Manager with advanced administrative responsibilities including using Kronos, accurately logging invoices; tracking uniform usage and overseeing all food outlet supplies.
    Responsibilities     

    • Fully understand and support Xanterra Mission Statement and Core Values.
    • Responsible for overseeing the daily operation of all dining outlets to maximize profitability, minimize legal liability and conform to the regulations of Coconino Health Department and Arizona Liquor Laws.
    • Responsible for compliance with all health and safety regulations and enforcing sanitary practices for food handling, general cleanliness, and maintenance of dining and food service areas.
    • Responsible for reporting all maintenance repair requests in a timely manner.
    • Support F&B compliance training programs by scheduling staff and assist in conducting assigned classes. Review tracking of front of house (FOH) staff to be in compliance with TIPS and Arizona Liquor Law.
    • Reviews and monitors expenditures to ensure that business unit(s) conforms to budget limitations. Records daily sales and labor costs on the “Actuals” spreadsheet to monitor labor costs.
    • Co-responsible with back of house (BOH) Manager for the efficient buffet set-up, maintenance and break down in accordance with current timetable. Following staffing guides for FOH and sets up sections for the meal period.
    • Ensure all guest complaints (food quality and service) and employee’s concerns/issues are investigated, resolved and handled in a professional manner; follow up with Operations Manager.
    • Perform periodic walk-through in the dining room and business unit(s); working closely with all BOH Managers to look at all areas of food service to ensure food quality, consistency, presentation, cleanliness and safety is maintained. Participate in quarterly F&B audits to determine areas and/or processes which may have opportunities for improvement.
    • Responsible for completing accident reports thoroughly and communicating with the Risk Manager as soon as possible, following-up with the General Manager and/or Operations Manager.
    • Ensure staff members adhere to all grooming and uniform standards; meeting the appearance standards as outlined in the Xanterra Tusayan, LLC Employees Handbook and departmental guidelines.
    • Ensure proper accounting procedures are in place and are enforced for check outs, voids, comps, spec sheets special event billing and tours. Responsible for FOH general invoices, coding; and tracking for non-foods and beverage.
    • Responsible for the completing the weekly manager schedules and scheduling of employee’s as required to meet business needs; review with General Manager and or Operations Manager to ensure schedules meet labor budget and guest demands.
    • Completes and issues hourly staff annual evaluations in a timely fashion; review with General Manager and/or Operations Manager. Issues periodic informal evaluations (HIGS) on FOH staff members on a bi-annual basis.
    • Responsible for administering disciplinary actions fairly and consistently with the approval of General Manager and/or Human Resources.
    • Responsible for reviewing and daily approval of all FOH employees through Kronos.
    • Follow up daily on the Company environmental program ensuring adherence to the recycle program and education of staff employees.

    Minimum Qualifications:

    • Previous two years food service management or supervisory experience with a thorough knowledge of food and beverage industry including alcohol sales.

    The Facilities Maintenance Engineer II is responsible for performing general maintenance and repair activities associated with the operation of all Xanterra Tusayan/Grand Hotel facilities.
    Responsibilities

    • Ability to perform second level trade functions such as electrical motor trouble shooting to 220 volts, plumbing, refrigeration/HVAC, basic boiler operation and kitchen equipment repair.
    • Ensures all repairs involving electrical, plumbing, carpentry, HVAC, and other repairs must adhere to current building codes and regulations.
    • Perform Lock Out / Tag Out Procedures
    • Perform basic carpentry and painting duties as necessary and directed.

    • Maintenance personnel must proactively seek out and report any safety issues regarding electrical, plumbing, HVAC, so that proper repairs can be made.
