- Prepare baked goods and fresh bread to standards of the kitchen for every service
- Bake pastries for a morning coffee shop on property
- Work with the Executive Chef to keep standards of pastries to a high standard
- Work closely with sous chefs to communicate your needs for prep from the prep crew
- Help the breakfast staff maintain food back-ups for the daily breakfast buffet
- Sanitize work areas during shift and stay organized
- Ensure all equipment is clean
- Operate the industrial dishwasher
- Wash glassware and other implements by hand when necessary
- Empty and clean all trash receptacles
- Stock supplies in serving stations or storage
- Empty and clean all garbage receptacles
- Follow sanitation policies at all times
- Provide assistance to prep cook and other kitchen staff as necessary, especially at peak hours
- Collaborate with wait staff to ensure that tables are cleared, cleaned and ready for the next guests
- Prepare dining room for guests by setting tables and stocking all necessary supplies prior to the beginning of service
- Support wait staff by assisting with delivery of food and retrieval of required supplies
- Arrange tables for large parties
- Maintain a clean and sanitary bussing station
- Execute bar setup and closing procedures
- Conduct proper alcohol serving procedures
- Ensure the proper handling of food according to health codes
- Close and balance assigned till, account for food and alcohol served
- Commitment to delivering exceptional guest service
- Excellent interpersonal and communication skills
- Previous custodial experience viewed advantageous
- Must possess a valid and clean driver’s license
- Knowledge of safety with cleaning chemicals and techniques
- Ability to regularly life 50 pounds

- Ensure all guests’ special needs are met, including dietary restrictions
- Estimate food consumption and purchases or requisitions food and kitchen supplies
- Ensure efficiency and timely food production and safety
- Participate in the provisioning of the island to include loading and unloading of supply vessels, conducting inventories and properly and safely storing items
- Instruct Line Cooks and Prep Cooks in their duties
- Interface with service staff to provide excellent customer service
- Assist with training and education of service staff in menu content
- Supervise menu and shift change over
- Develop daily specials
- Acknowledge and understand daily menu changes
- Ensure excellent guest service through training and supervising of dining room and bar team members
- Coordinate an efficient working environment between the kitchen and front of house team members
- Accurately report food and beverage data
- Set up wait stations for the shift
- Set up the kitchen service areas for the shift
- Knowledge and understanding of the daily specials
- Ensure the proper handling of food according to health codes
- Clean all rooms and other areas assigned to you
- Respond quickly to guest requests with accommodations that may enhance their experiences with the lodge
- Ensure privacy and confidentiality for lodge guests
- Address questions and concerns and report identified maintenance issues to supervisor
- Relieve Housekeeping Manager, Assistant Housekeeping Manager, and Laundry Supervisor during scheduled days off
- Perform inspections to ensure cleanliness is up to standards and meets guest expectations
- Assist with the preparation schedules and payroll
- Provide training and support to housekeeping and laundry staff
- Supervise, train and provide leadership to the Laundry Attendants
- Safely operate laundry equipment; launder, fold and organize all Lodge linens
- Fill linen orders and maintain specific linen inventories
- Develop and maintain positive working relationships with others, support team to reach common goals
- Take directions from Chef
- Provide excellent service to both guests and team members
- Ensure all guests’ special needs are met, including dietary restrictions
