Xanterra Travel Collection operates the Retail, Food & Beverage, Parking, Security, Maintenance, and Administration departments for Mount Rushmore National Memorial.

Peak season extends from Memorial Day to Labor Day, with some positions starting in April and lasting until late October. Employees are expected to be able to work day and evening shifts, weekends, and holidays.

  • Sous Chef

    Food & Beverage

    ESSENTIAL DUTIES AND RESPONSIBILITIES include the following.  Other duties may be assigned.

    • Plans or participates in planning menus and utilization of food surpluses and leftovers, taking into account probable number of guests, marketing conditions, popularity of various dishes, and recency of menu.
    • Supervises cooking and other kitchen personnel and coordinates their assignments to ensure economical and timely food production.
    • Observes methods of food preparation and cooking, sizes portions, and garnishing of foods to ensure food is prepared in prescribed manner.
    • Tests cooked foods by tasting and smelling them.
    • Familiarizes newly hired cooks with practices of kitchen and oversees training of cook apprentices.
    • Establishes and enforces nutrition and sanitation standards for restaurant.
    • Assumes Executive Chefs responsibilities when chef is gone.

    SUPERVISORY RESPONSIBILITIES

    • Manages 6 to 10 subordinate supervisors who supervise a total of 2 to 30 employees in the Kitchen Department. 
    • Is responsible for the overall direction, coordination, and evaluation of this unit. 
    • Also directly supervises 2 to 30 non-supervisory employees. 
    • Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws.
    • Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

    This Year-Round position will typically work 24 hours per week (2-3 shifts per week) during the winter season and 40 hours per week (full-time) during the summer season.

    Responsibilities

    • Maintains building, performing minor and routine painting, plumbing, and other related maintenance activities.
    • Replaces air conditioner filters.
    • Notifies management concerning need for major repairs or additions to lighting, heating, and ventilating equipment.
    • Cleans snow and debris from sidewalk.
    • Mows lawn, trims shrubbery, and cultivates flowers.
    • Cleans rooms, hallways, lobbies, lounges, rest rooms, corridors, elevators, stairways, and locker rooms and other work areas.
    • Sweeps, scrubs, waxes, and polishes floor. Cleans rugs, carpets, upholstered furniture, and draperies.
    • Polishes metalwork kick plates.
    • Washes walls, ceilings, and woodwork.
    • Washes windows, door panels, and sills
    • Empties wastebaskets.
    • Transports trash and waste to disposal area.
    • Replenishes bathroom supplies.
    • Replaces light bulbs.
    • Transports small equipment or tools between departments.
    • Sets up tables and chairs in dining room or EDR.

Mount Rushmore Memorial operates a variety dining outlets serving convenient grab-and-go meals, coffee, and desserts. We offer opportunities to share your passion and hands-on expertise for hospitality by overseeing front-of-house and back-of-house staff.

    Summer seasonal positions extend until October 30th, 2022!

    Responsibilities:

    • Responsible for continued supervision, development and training of 2-20 employees in a designated area of the operation.
    • Lead, train, and inspect the performance of assigned staff, ensuring that all procedures are completed to the property's standards. Follow and enforce all policy, procedures, and service standards.
    • Assist in schedules or supervise the scheduling of staff. 
    • Confer with food preparation and other personnel to plan menus and related activities such as dining room, bar, and banquet operations.
    • Inspects food service facilities to ensure that equipment and buildings meet requirements of state and local health laws and internal regulations.
    • Investigates and resolves food quality and service complaints.
    • Analyzes information concerning facility operation such as daily food sales, patron attendance, queue times and labor costs to maintain cost control of facility operations.
    • Inspects and tastes prepared foods to maintain quality standards and sanitation regulations.
    • Ensure work area is orderly and properly stocked.
    • Ability to work from prep and par lists and follow standardized recipes. Commit food specifications to memory.
    • Complete assigned duties within each shift.
    • Develop and maintain positive communication and teamwork with all co-workers, crew and supervisors.

    Qualifications:

    • Ability to organize and prioritize under pressure while maintaining a calm and pleasant demeanor.
    • Ability to communicate effectively with guest, co-workers, and supervisors.
    • Ability to absorb large amounts of information quickly:  Service procedures, specs, prep and set-up requirements. 
    • Knowledge of basic sanitation and kitchen equipment skills.
    • Maintain paperwork requirements.
    • Comprehending and extending recipes if applicable.
    • Ability to adapt to change, new situations, changes in staffing and procedures.
    • Must be able to stand for long periods of time, approximately 8 hours; and walk for long periods of time.
    • Must be able to lift and carry a minimum of 50 pounds.
    • Must be able to bend, stretch, and reach for extended periods of time.
    • Knowledge of and compliance to all area cycles, presentations, specifications and guidelines.
    • Conducts themselves in a professional manner with the awareness that all actions and communications are within staffs view.  Ensure a congenial atmosphere for all.
    • Working knowledge of basic cooking/Food and Beverage practices.

How to Apply

Employees must be 18 years old to live in the housing facilities at Mount Rushmore National Memorial.

AVAILABILITY DATES: Our busy season begins in May and lasts into September. Some positions start in early April and last until mid-October. Your employment chances improve if you can arrive early and work through September or later. Be realistic and specific about the exact dates you will be available, as these dates become part of your Employment Agreement.

INTERNATIONAL APPLICANTS: Applicants must have a J-1 visa through CIEE or Janus International. We are unable to sponsor applicants for employment.
