    Duties

    • Gathers all dirty dishware from tubs brought to the dish room rinses and stacks in dish racks, always clearing dishes of leftovers and trash to prepare for automated washing.
    • Loads full dish racks on the belt and ensures correct placement by the instructions for the operation of the machine. Operates automatic dishwashing machine by using controls as instructed.
    • Loads dishwashing solutions into automatic dispensers and regulates the output of detergents and chemicals to the dishwashing machine by monitoring and adjusting controls.
    • Unloads clean dishes from racks after being processed through the dish machine, inspects for cleanliness, and carefully stacks in specified carts and shelves for easy use by restaurant and kitchen staff.
    • Manually scrub pots, pans, and other kitchen equipment that cannot be washed automatically, using detergents, scourers, and special solutions as required. Inspects for cleanliness, manually dries with hand towels, and puts away in the correct place.
    • Manually polishes all silver, stainless steel, and pewter used in food service, using standard polishing cloth and products, to present clean and attractive equipment to diners.
    • Maintains the automatic dishwashing equipment in good condition and working order per manufacturers' instructions to prolong the life of the equipment, prevent breakdowns, and meet mandated health compliance regulations.
    • Keeps the dish room in clean and orderly condition at all times by sweeping, mopping, emptying trash, wiping counters and equipment, and organizing shelves to maintain a sanitary workstation and to meet mandated health compliance requirements.
    • Mops kitchen floors as requested and at the end of each shift, cleans all kitchen work surfaces as regularly scheduled by the manager including walls, ceilings, hoods, vents, and ovens.
    • Gathers all trash cans from kitchen work areas at the end of each shift and empties them into an outside trash compactor.
    • Sweeps loading dock and kitchen entrance areas, clearing litter and debris to trash bins, for the safety of employees and purveyors.
    • Performs other duties as assigned, requested, or deemed necessary by management.
    • Unloads deliveries as they arrive, and accounts for ordered items by comparing packing lists to actual items received.
    • Transports deliveries to the stock room by carrying boxes or using a dolly.
    • Assist kitchen with sorting and storing of delivered goods. Assists other employees and departments to contribute to the best overall performance of the department and hotel.

    Qualifications

    To perform this job successfully, an individual must have basic knowledge of dishwashing, and cleaning and be able to perform each essential duty satisfactorily.

    Certification and Licenses: A current Texas Food Handler certificate is required.

    Language Ability:  Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.

    We are located on Highway 170 where the road bends to meet the Rio Grande which is 17 miles southwest of the junction of Highways 118/170 at Terlingua, Texas.  The resort is tucked between Big Bend National Park and Big Bend Ranch State Park. 

    To put it in perspective, we are approx. 200 miles to the closest Walmart in Fort Stockton, and 95 miles to the closest McDonalds or stop light in Alpine!  We are here because we love the remoteness.  No traffic, no big-city lights, creates an environment of peace and quiet and unsurpassed stargazing!

    While a vehicle is not required at the resort with housing close to the facilities, a vehicle is useful for major shopping or outing trips to Presidio, located 55 miles southwest of the resort, or Alpine, located 95 miles north of the resort.

    The essential duties and responsibilities for this position are:

    • Clearing all used tableware and napkins from tables to tubs in bus station. Wipe table, chairs, and clear debris and crumbs from floor areas surrounding table. 
    • Resets the tables in accordance with established standards in order to seat new customers as quickly as possible.  Remove full tubs from bus stations to dishwashing area for cleaning, and maintain a clean, well-stocked and orderly bus station at all times in order to improve efficiency and productivity. 
    • Retrieve cleaned dishes, glassware and utensils from the dish room and distribute to each service station in order to keep a ready supply available for restaurant use. 
    • Sweep restaurant floors throughout shift to maintain a clean, presentable and attractive restaurant.  Vacuum carpeting and mop hard floors at the end of each shift. 
    • Retrieve clean linens from laundry department at beginning of shift and during shift when necessary, and folding as specified by established standards.  Stocking correct par levels in the service stations.  Deliver bundles of soiled linen to laundry room at end of each shift. 
    • Retrieve items from stockroom, ensuring requisition is complete and correct.  Stocking supplies in proper places, rotating stock at all times. 
    • Assist wait staff by refilling customer’s beverages and accommodating requests for additional condiments, food items or clean/fresh tableware. 
    • Keep ice stations filled at all times by carrying buckets of ice from the main ice machine and pouring into individual ice stations. 
      Keep a friendly, cheerful and courteous demeanor at all times.

    Getting Here and Getting Around

    We are located on Highway 170 where the road bends to meet the Rio Grande which is 17 miles southwest of the junction of Highways 118/170 at Terlingua, Texas.  The resort is tucked between Big Bend National Park and Big Bend Ranch State Park. 

    To put it in perspective, we are approx. 200 miles to the closest Wal-Mart in Fort Stockton, and 95 miles to the closest McDonalds or stop light in Alpine!  We are here because we love remoteness.  No traffic, no big-city lights, creates an environment of peace and quiet and unsurpassed stargazing!

    While a vehicle is not required at the resort with housing close to the facilities, a vehicle is useful for major shopping or outing trips to Presidio, located 55 miles southwest of the resort, or Alpine, located 95 miles north of the resort. 

    For Fun

    The Big Bend region is full of adventure and places to explore! Whether you want to hike the national and state park, or hike right out your front door on the resort's 27,000 acres! We also have river access so you can kayak, paddleboard, or just go swimming whenever you like! Like mountain biking? We have hundreds of miles of trails to explore. Like to play music? The eclectic town down the road of "Terlingua" has some restaurants and bars that feature open mic nights for local musicians! 

    There are more restaurants and shopping opportunities as close as 12 miles away.  A full day trip could take in the Big Bend National Park, Big Bend Ranch State Park, Fort Davis, and its historical park and town; the McDonald Observatory; art, shopping, and the Sul Ross State University in Alpine; the Marfa Lights and the town of Marfa; and much more!
