Job Overview
As a member of the kitchen team it is your responsibility to maintain the four core principles of Denali Brewpub: Safety, Quality, Production and Teamwork.
Qualifications:
- Prior kitchen experience preferred.
- Alaska Food Handler card.
- High level of attention to detail.
- Ability to think and act creatively, while conforming to existing standard operating procedures and DEC regulations.
- Must be in good physical condition.
- Ability to sit/stand/bend/walk and maintain manual dexterity for duration of work period.
- Must be able to work independently.
- Able to lift 55 lbs. and move at least 165 lbs., and work in extreme hot and cold environments.
- Have a flexible schedule, be a team player.
Duties will include:
- Maintain appearance, cleanliness and general ambiance in accordance with the culture of Denali Brewpub.
- Become proficient at execution of required stations.
- Maintain clean, safe stations.
- Develop a strong understanding of recipes and food preparation.
- Maintain food cost by using portion controls and minimizing loss.
- Minimize bio waste through food reclamation and grease management programs.
- Assist other stations as needed, i.e. Prep Cook and DMO.
- Other duties as assigned by management.

- Provide exceptional customer service.
- Maintain appearance, cleanliness and general ambiance in accordance with the culture of Denali Brewpub.
- Maintain a clean, safe work environment.
- Develop a strong understanding of the menu.
- Develop a strong understanding of craft beer, spirits and wines.
- Maintain food cost by using portion controls and minimizing loss.
- Develop a strong understanding of the POS.
- Promote our retail program (i.e. merchandise sales, to go beverage sales, etc.)
- Deliver food and beverages, bus tables and run bus tubs.
- Greet guests and create a welcoming environment.
- Proper cash handling.
- Facilitate pest prevention program(s).
- Opening and closing duties and side work as outlined in the FOH binder.
- Seasonal servers may also be scheduled as FOH support during early and late season, or when necessary throughout summer season, depending on staffing.
- Other duties as assigned by management.

- Promote our retail program (i.e. merchandise sales, to go beer sales, etc.)

- Sweep and mop as needed.
- Restock table caddies, silverware and condiments.
- Ensure servers and bar tenders receive guest checks.
- Loss prevention.
- Help bar staff with glassware as needed.
- Empty FOH and DMO trash.
- Assist DMO staff by taking dish tubs to the kitchen. Help empty, clean and restock as needed.
- Put away clean dishes and equipment.
- Assist other FOH staff as needed.
- Other duties as assigned by management.

- Quality control all product delivered to guests.
- Communicate clearly and respectfully.
- Work in a fast-paced environment and keep the food window clean and organized.
- Deliver product to guests in a timely manner.
- Carry large trays of food and multiple plates long distances in a crowded environment.
- Follow up with guests to ensure they have everything they need.
- Follow up and communicate with servers and bar tenders to make sure guests receive what they need and proper orders are placed.
- Pre-bus tables and restock when time allows.
- Communicate with kitchen staff to maximize efficiency, organization and maintain good ticket times.
- Maintain food cost through portion control and minimizing loss.
- Develop a strong understanding of cold side standard operating procedures.
- Assist kitchen staff as needed.
- Set up and tear down expo station and stock accordingly throughout the shift.
- Opening and closing side work.
- Other duties as assigned by management.
