Alaska’s Boardwalk Lodge is an award-winning, top-rated, Orvis Endorsed Fishing Lodge. We treat our guests to the solitude of fishing wild Alaska, with first-class fishing guides, while enjoying gourmet food, and comfortable accommodations.
Boardwalk’s oceanfront resort features world-class saltwater fishing, freshwater fishing, and spectacular Southeast Alaska eco tours. Our service is best-in-class. We are looking for a professional and experienced executive chef to help our kitchen run smoothly for our 2024 season. The position starts ASAP and is a seasonal position that runs through September. You will recognize and enjoy the Boardwalk difference! We aren’t like all the other outfitters.
Responsibilities:
- Help to oversee back-of-house operations.
- Assisting and directing kitchen staff in meal preparation, creation, plating and delivery
- Identifying and introducing new culinary techniques
- Preparing meals and completing prep support as needed
- Determines plating and presentation plans.
- Orders and evaluates the quality of new food.
- Stocks the kitchen with necessary supplies.
- Handles and resolves customer complaints.
- Makes sure the kitchen staff follows all food safety laws.
- Sets and implements the kitchen policies and procedures.
Requirements:
- Advanced culinary skills including food preparation, flavor pairings and other cooking best practices
- Proven working experience as a chef
- Excellent record of kitchen management
- Ability to spot and resolve problems efficiently
- Capable of delegating multiple tasks
- Communication and leadership skills
- Keep up with cooking trends and best practices
- Works well in a fast-paced kitchen
- Time management and organization
Education:
BS degree in culinary science or related certificate
American Culinary Federation Certified Executive Chefs (CECs) are preferred.
