Hell's Backbone Grill & Farm, now in our 27th season, is a James Beard nominated farm-to-table restaurant in remote Southern Utah. We believe deeply in the importance of organic, locally produced, regionally, and seasonally appropriate cuisine. On our 6.5 acre farm, we grow vegetables, fruit, herbs, flowers, and raise hens for eggs, all of which is lovingly cooked and served (or pickled & jammed!) in our restaurant. We rely largely on local ranchers for the grass-fed and finished meat we serve, and local farms who work with us to supplement our crops. Our commitments to sustainability and environmental ethics are central to our restaurant and farm.
In early 2025, we ended our 25 year stint as renters and were able to acquire the Lodge property where the restaurant is located! This enabled us to open our breakfast & lunch concept, Little Bone Food Truck, which we affectionately refer to as Hell's Backbone Grill's feisty little sister. And in addition to the restaurant, farm, and food truck, we now also operate the 22-room lodge. We're BUSY!
Being located on the edge of wilderness, we must be stewards of the land that provides for us. Boulder is a town of 250 people, surrounded by the vast Grand Staircase Escalante National Monument, and on a scenic road connecting Southern Utah's National Parks. We are public lands advocates who take seriously our role as environmental and social activists. We have the good fortune to nourish people as they experience this wild and important landscape, so we are committed to using our voice to protect it.
Though we are situated in a remote town, we are bustling during the season (mid-March to early December). The restaurant is a fun and fast-paced work environment, with an emphasis on quality and connection. With a restaurant and food truck staff of around 40 people, a farm crew of 3, and a lodge team of around 15, the Hell's Backbone community is tight-knit and diverse. Our staff works very much as a team, so a willingness to pitch in and good communication skills are a must! Even if you work in the restaurant, we invite and encourage everyone to visit and help out on the farm. This can be a great opportunity to learn about growing food and nourishing soil, which are skills we believe everyone should have!
We are hiring Servers for the Dining Room! Our 2026 season has begun, and we are wildly busy. So we are hoping to meet the demand and increase our staff. As we have a limited amount of housing available, we are hoping for people who are flexible and open to combination positions. The needs are always changing, and being nimble is the key to success here! The general breakdown of the available positions is as follows:
SERVER OVERVIEW
We are hiring for FOH staff at our James Beard Nominated, Farm-to-Table Restaurant! Servers at our restaurant have the pleasure of presenting food that they can be proud of - with many of the ingredients sourced from our own farm and local ranchers. Though we expect fine dining quality service from our servers, the most important is that our servers create a warm, welcoming environment for our guests.
Essential Functions:
FOH staff at HBG work as a team to create the best possible experience for our guests.
Experience in fine dining is valued, and we train staff to our specific steps of service
Job duties include: greeting guests, seating guests, taking orders accurately, providing attentive service, addressing customer concerns, performing side-work/cleaning duties, wine knowledge, beer knowledge, staying current with farm ingredients
Expectations:
Treat coworkers and restaurant guests with kindness and respect
Maintain positive and professional attitude
Adhere to FOH Dress Code
Be nimble and flexible - living and working in a remote place requires an ability to adapt and be resourceful
Respect Hell’s Backbone Grill & Farm resources (ingredients, equipment, time, etc.)
Qualifications & Skills:
Must have strong communication skills
We use Toast as our POS & Tock as our reservation system
Teamwork - must work well with others, which includes using clear and respectful communication and being willing to help others
Listening skills - ability to follow tasks to specific instructions; ask clarifying questions if unclear
Time Management - manage time effectively in order to elevate guest's needs & experience
Problem Solving - engage critical thinking skills when confronted with problems
Non-Smoker
Work Schedule, Compensation & Housing:
Full-time (40-45 hours a week)
5 days/week with two days off
Shift is generally 2:30 - 10:30 pm.
Wage of $6/hr plus tips (all FOH positions operate as a tip pool).

There is limited subsidized housing (private room) available for rent - please ask for details.
As we are in a remote location with no public transportation, you MUST have a car or motorcycle.
