The Role
As the AM Chef at Smith Fork Ranch, you’ll be part of a dynamic kitchen that values quality, teamwork, and creativity. Working alongside the Executive you'll help prepare thoughtfully crafted, seasonal breakfast and lunch menus using the best local ingredients. This role is perfect for a passionate, hard-working individual who takes pride in their craft and wants to grow their skills in a luxury guest ranch setting.
Responsibilities
Maintain a clean and organized workstation, ensuring adherence to food safety and sanitation standards.
Assist in the preparation of mise en place for service, including chopping, portioning, and organizing ingredients.
Work efficiently in a fast-paced environment while upholding the highest standards of food quality and presentation.
Adapt to seasonal menus and special event dining experiences, incorporating fresh, locally sourced ingredients.
Collaborate with the kitchen and front of house teams to ensure smooth service and timely execution of dishes.
Accommodate dietary restrictions and guest preferences while maintaining the integrity of each dish.
Assist with inventory management, proper food storage, and minimizing food waste.
Follow kitchen protocols, including temperature checks, cleaning schedules, and proper handling of kitchen equipment.
Support a team-oriented, positive kitchen culture that aligns with the ranch’s luxury hospitality standards.
Qualifications
2+ years of experience in a high-end restaurant, luxury resort, or fine dining kitchen.
Strong knife skills and proficiency in various cooking techniques (sautéing, grilling, roasting, etc.).
Ability to follow recipes and plating standards with precision.
Knowledge of food safety regulations and best practices in kitchen sanitation.
Passion for farm-to-table cuisine and a commitment to using high-quality ingredients.
Ability to work effectively in a team-oriented environment, maintaining professionalism under pressure.
Strong organizational skills and attention to detail.
Flexibility to adapt to changing menus, guest requests, and special events.
Willingness to work evenings, weekends, and holidays as needed.
Prepare and execute dishes with consistency and attention to detail, following the Executive Chef’s direction.
Work Requirements
Ability to walk, kneel, reach, and stand for long periods.
Ability to regularly lift and relocate up to 50 pounds, and frequently lift and relocate up to 10 pounds.
Ability to safely work in extreme temperatures, including walk-in refrigerators/freezers and kitchen lines.
Ability to read and understand recipes.
