Prep Cook at Fishing Lodge
Alaska Trophy Adventures Lodge seeks an experienced cook with basic to intermediate restaurant kitchen skills to assist the chef in preparing and plating breakfasts and dinner for 40-50 people. Six-day, 45-hour work week (shorter, easier day on Sunday) with one full day off. Plenty of time for fishing, exploring, or relaxing on mid-day break. Newly remodeled kitchen. Great opportunity, amazing location and views.
KEY RESPONSIBILITIES
Food Processing & Preparation -- Washing, peeling, chopping, slicing, dicing, and various methods of preparing vegetables, fruits, starches, and proteins as per the daily menu
Recipe Components -- Measuring ingredients and preparing foundational items like stocks, soups, marinades, salads, salad dressings, desserts, side dishes
Inventory & Stocking -- Helping maintain an organized fridge/freezer/pantry, properly rotating stock, and labeling food items according to health and safety standards
Kitchen Organization – Ensuring tools and items are clean and in their proper place
Station Setup – Helping clean and ready the line before meal service begins
Plating -- Helping plate breakfasts and dinners with proper temps and portions
Sanitation -- Helping wash cookware, cleaning the stoves and kitchen work areas, sweeping the floor, emptying trash, and maintaining a clean, sanitized workspace
SCHEDULE
Typical Daily Schedule (approx 7-8 hours x 5 days per week)
7am – 10am Breakfast Service / Dinner Prep / Cleanup
10am – 3/4pm Mid-Shift Break (Go Fishing! / Explore / Relax)
3/4pm – 8:30pm Dinner Prep / Dinner Service / Next Day Prep / Cleanup
Sunday (5-6 hours) – Guest Changeover Day, so we also serve lunch
7am – 10am Breakfast Bar Service / Lunch Prep
10am – 11:30am Mid-Shift Break
11:30am – 2pm Lunch Bar Service / Dinner Prep
