The Grand Hotel is a 3-diamond hotel with 121 standard and deluxe guest rooms and is located in Tusayan, Arizona - only one mile from the south entrance of Grand Canyon National Park!

Our luxurious hotel offers an indoor heated swimming pool and spa and fitness center. The hotel is open year-round with a peak season between April and October. Xanterra operates the hotel, two dining facilities, and a retail shop. The year-round staff consists of approximately 90 employees during peak season. Job Summary:

The Advanced Cook is an advanced skill level position responsible for preparing meals and following establishment recipes including preparing ingredients, adhering to the restaurant menu, and following food health and safety procedures. Grill Broiler Master – experience cooking steaks, fish and burgers, plating food, and preparing dishes with available ingredients.

Responsibilities:

  • Prepare plated, batch and banquet menu items in accordance to established recipes and standards.
  • Prepare menu items maintaining proper portion control for all items, and presentation and cooked to the proper temperature.
  • Follow prep guidelines to limit overproduction.
  • Prep menu/banquet items to specs outlined by Kitchen Manager.
  • Set up and break down work stations and production areas according to assigned shift duties.
  • Maintain County HACCP food sanitation standards throughout all areas and steps of food production.
  • Work any station in the prep area or in the kitchen as assigned by the Kitchen Manager or Supervisor
  • Communicate with Kitchen Manager or Supervisor on production problems, “86’d” items or items dragging.
  • Practice safety in knife handling, equipment operation, lifting, working with open flame and all other areas of food production.
  • Responsible for product organization of food storage.
  • Use proper product rotation of perishable items practicing first-in-first-out method of use.
  • Maintain professional communication with front-of-the-house staff and co-workers.
  • Ensure quality control of all items prepped and/or cooked.
  • Work in dish area as necessary.
  • Deep clean kitchen equipment.
  • Adhere to all sanitation, safety, risk management and environmental policies.
  • Other duties as assigned

Qualifications:

  • Must be at least 18 years of age or older.
  • At least two years previous cooking experience in a high volume ala carte or batch production setting.
  • Knowledge of food sanitation regulations with ability to apply these regulations while on the job.
  • Advanced knife skills
  • Advanced experience working with various stations in the kitchen (broiler, flat top, and steamer).
  • Bilingual (English/ Spanish) skills are desired to effectively communicate with all staff.
