  • Banquet House Attendant

  • Commis; Experienced Line Cook

    As a Commis at Shore Lodge, Whitetail Club, you will assist the assigned Chefs in all duties. You will need to be able to execute various food preparation requirements while following all safety and sanitation standards performing in one of our 8 outlets. You must be flexible and able to work in different stations in the kitchen and learn the skills required to improve your knowledge.
    Essential Duties and Responsibilities:

    • Ensure that prep lists are completed by the end of the shift with no unauthorized overtime
    • Ensure that all opening/closing procedures are completed and set for the next shift
    • Monitor all refrigeration and dry storage for proper handling and rotation
    • Participate and maintain knowledge with ongoing education programs for sanitation and safety
    • Check daily production sheets and verify with Chef de Cuisine or Sous Chef as to daily work needs
    • Monitor food quality and rotate food in walk ins and freezers to minimize waste and spoilage
    • Ability to help prepare orders according to the established standard
    • Follow all sanitation guidelines and safety precautions
    • Leave work stations in a clean and orderly fashion. All foods must be covered, labeled, and properly stored
    • Be familiar with all kitchen equipment, their functions and maintenance requirements
    • Gain and possess an understanding/knowledge and adherence to kitchen policies and procedures
    • Know all safety and emergency procedures and participate in recycling procedures of trash disposal
    • Wear gloves when handling food that is 'ready-to-eat'
    • Make logical decisions relating to par levels, must be able to organize and prioritize daily par sheets.
    • Learn to read and understand banquet BEO
    • Make daily a thorough mis-en-place of all items featured on the menu
    • Must be able to read standardized recipes and help prepare
    • Communicate effectively with co-workers and managers; ensure efficient and effective communication with front of house staff
    • Ability to multi-task while maintaining a high level of organization and remaining detail oriented


    • High School Equivalency, some Vocational or Technical Schooling in the culinary arena preferred

    JOB SUMMARY: Assist the assigned Chef de Partie/Chef de Cuisine/Sous Chef in all duties. Act in place of Chef de Partie and/or Sous Chef in their absence, following standard recipes and cooking techniques while acting professionally and following all safety and sanitation standards.               

    Skills and Qualifications          

    • High School Diploma or equivalent and a 2 Year Culinary Degree or commensurate experience 5+ years in the culinary industry
    • Must be able to read and prepare standardized recipes according to Chef’s specifications
    • Must be able to organize and prioritize daily par sheets
    • Possess and exhibit an understanding of proper food handling, equipment and utensils
    • Ability to cooperatively delegate work properly and in a fair manner thereby creating smooth operations in the kitchen
    • Must be able to quickly assess situations, determine priority, create a strategy and implement it
    • Ability to multi-task while maintaining a high level of organization remaining detail oriented
    • Must be able to communicate effectively with fellow associates supervisors, managers and staff 
    • Must be able to sustain a fast pace while staying focused on the finest of details

    • Send for requisitioned items from storeroom, personally verifying both quantity and quality.
    • Supervise the general cleaning and proper handling of food leftovers after meal services.
    • Reorganize refrigerators, re-stock items up to par and reorganize section for next meal preparation.


    • Present initiative and ingenuity with only general supervision.
    • Maintain an optimistic personality to handle high-pressure environment.
    • Assist other team members as needed.
    • Assist with any reasonable requests from management.
    • Maintenance of work station, assist with prep and cleaning.

    • Time spent in both front of the house and back of the house positions, as well as bartending

    • Able to carry 25 lbs on a large oval tray and lifting supplies or equipment of thirty (30) pounds or more
    • Able to count, read and write in the English language

    The Sales Executive will work with Whitetail Club’s marketing and operations team as well as the Shore Lodge team to cultivate qualified real estate leads, participating in special events, making presentations at member gatherings, while also helping maintain the high standards of service for members and guests.   

    Skills and Qualifications:                     

    1. Bachelor’s degree, with focus in Business Management, Finance, Marketing, Tourism/Recreation or related field
    2. Proven successful track record of managing the sale of high end developer resort property
    3. Valid Driver’s license
    4. Valid Idaho Real Estate Sales License or ability to obtain one within 90 days of hire (see IREC website for additional information)
    5. Minimum 5 years developer resort real estate experience, with a thorough understanding of the development process and strategic planning
    6. Strong negotiating skills
    7. Proven ability to manage multiple projects and responsibilities while working in a fast paced environment
    8. Proven excellent interpersonal and communication (verbal and written) skills with the ability to cultivate and maintain relationships
    9. General knowledge of planning & zoning regulations and construction matters, including move-in punch list processes
    10. Self-motivated, with high degree of energy, independence, initiative, responsibility, and accountability

    Act as a liaison between the Banquet Chef and Banquet Service Team to ensure complete, effective communication between the production serving of banquet food.  Provide quality service to our guests during their dining experience, exceeding our service standards, and providing service excellence related to well-prepared cocktails, knowledge of food and wine.



    • Schedule banquet service personnel, assign specific tasks or services, ensure that safety and sanitation codes are followed; examine the cleanliness of the venue, including bathrooms, prior to a function.

    • Work closely with Food and Beverage Directors and Supervisors and coordinate with kitchen staff to execute the details of the menu, food preparation activities, and service standards.
    • Inspect food service tables and table place settings, including table linens, china, glass, silverware and condiments for correct placement and ensure that each element is clean, undamaged, and attractive.
    • Ensure all scheduled events take place on time and according to plan. Interact with the host to respond to any special requests or last-minute adjustments prior to and during the event.
    • Communicate clearly and effectively while maintaining a fast-pace and remaining highly organized and detail oriented.
    • Utilize strong organization and excellent customer service and cash handling skills.
    • Possess a functional knowledge of food techniques, their preparation and presentation.
