  • Commis; Experienced Line Cook

    Summary:
    As a Commis at Shore Lodge, Whitetail Club, you will assist the assigned Chefs in all duties. You will need to be able to execute various food preparation requirements while following all safety and sanitation standards performing in one of our 8 outlets. You must be flexible and able to work in different stations in the kitchen and learn the skills required to improve your knowledge.
     
    Essential Duties and Responsibilities:

    • Ensure that prep lists are completed by the end of the shift with no unauthorized overtime
    • Ensure that all opening/closing procedures are completed and set for the next shift
    • Monitor all refrigeration and dry storage for proper handling and rotation
    • Participate and maintain knowledge with ongoing education programs for sanitation and safety
    • Check daily production sheets and verify with Chef de Cuisine or Sous Chef as to daily work needs
    • Monitor food quality and rotate food in walk ins and freezers to minimize waste and spoilage
    • Ability to help prepare orders according to the established standard
    • Follow all sanitation guidelines and safety precautions
    • Leave work stations in a clean and orderly fashion. All foods must be covered, labeled, and properly stored
    • Be familiar with all kitchen equipment, their functions and maintenance requirements
    • Gain and possess an understanding/knowledge and adherence to kitchen policies and procedures
    • Know all safety and emergency procedures and participate in recycling procedures of trash disposal
    • Wear gloves when handling food that is 'ready-to-eat'
    • Make logical decisions relating to par levels, must be able to organize and prioritize daily par sheets.
    • Learn to read and understand banquet BEO
    • Make daily a thorough mis-en-place of all items featured on the menu
    • Must be able to read standardized recipes and help prepare
    • Communicate effectively with co-workers and managers; ensure efficient and effective communication with front of house staff

    Education/Experience:

    • High School Diploma or equivalent and a 2 Year Culinary Degree or commensurate experience 5+ years in the culinary industry
    • Must be able to read and prepare standardized recipes according to Chef’s specifications

    • Possess and exhibit an understanding of proper food handling, equipment and utensils

    • Assist Chef’s in food requisition to ensure sufficient inventory while minimizing waste.
    • Ensure attractive placement of food items, show pieces etc… on display where required.
    • Receive food checks, event orders and prepare them to specifications.
    • Send for requisitioned items from storeroom, personally verifying both quantity and quality.
    • Supervise the general cleaning and proper handling of food leftovers after meal services.
    • Reorganize refrigerators, re-stock items up to par and reorganize section for next meal preparation.

    The Sales Executive will work with Whitetail Club’s marketing and operations team as well as the Shore Lodge team to cultivate qualified real estate leads, participating in special events, making presentations at member gatherings, while also helping maintain the high standards of service for members and guests.   

    Skills and Qualifications:                     

    1. Bachelor’s degree, with focus in Business Management, Finance, Marketing, Tourism/Recreation or related field
    2. Proven successful track record of managing the sale of high end developer resort property
    3. Valid Driver’s license
    4. Valid Idaho Real Estate Sales License or ability to obtain one within 90 days of hire (see IREC website for additional information)
    5. Minimum 5 years developer resort real estate experience, with a thorough understanding of the development process and strategic planning
    6. Strong negotiating skills
    7. Proven ability to manage multiple projects and responsibilities while working in a fast paced environment
    8. Proven excellent interpersonal and communication (verbal and written) skills with the ability to cultivate and maintain relationships

    • Utilize strong organization and excellent customer service and cash handling skills.
