Financial Resource Function

  • Provide ongoing training and support for all daily financial functions
  • Enforce policies onboard regarding employee meals and consumption onboard
  • Utilize the POS System including troubleshooting of basic issues
  • Ensure the Safety and fully utilize Safety Program
  • Work with management team to ensure all daily safety reporting is accomplished
  • Work with management team on Accident investigation
  • Ensure adherence of all onboard staff to ESS safety programs and guidelines
  • Assist at depots and stops with the safe loading and unloading of passengers, assist physically challenged and special groups by opening doors, operating chair lift, etc. Provide assistance with crowd control.
  • Immediately notify management of any incidents onboard, no exceptions

Supervisory Responsibilities:
Directly supervises up to 15 employees. Carry out supervisory responsibilities in accordance with the ESS/AKRR policies, and all applicable laws.

Lead Cook - Alaska Railroad Catering

This is an exciting chance to utilize your cooking skills and talent on the Alaska Railroad for the Summer 2018 Season!
 
Summary Responsible for all product that comes into and goes out of kitchens.  Accurately and efficiently cook meats, fish, vegetables, soups and other hot food products as well as prepare and portion food products prior to cooking. Also perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.
 
Qualifications 
Professional cooking experience is required. To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.   • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications.
  • Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, saut'e burners, convection oven, flat top range and refrigeration equipment.
  • Uses our Standard Recipe Card for preparing all products. Do not rely on the memory of yourself or other employees.
  • Prepares item for broiling, grilling, saut'eing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Handles, stores and rotates all products properly.
  • Assists in food prep assignments.
  • Wash and store all tableware and kitchenware.
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Attends all scheduled meetings and brings suggestions for improvement.
  • Performs other related duties as assigned by the management team.

Summary
Assist lead cook in accurately and efficiently preparing meats, sandwiches, salads, soups and other food products as well as portion food products prior to cooking. Also performs other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Zero tolerance for theft, all food produced must have a ticket, responsible for inventories/pars, utilizing all previous shifts acceptable leftovers.
  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
  • Knows and complies consistently with our standard portion sizes, quality standards and kitchen rules, policies and procedures.
  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications.
  • Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, saut'e burners, convection oven, flat top range and refrigeration equipment.
  • Uses our Standard Recipe Card for preparing all products. Do not rely on the memory of yourself or other employees.
  • Prepares item for broiling, grilling, saut'eing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Handles, stores and rotates all products properly.
  • Assists in food prep assignments.
  • Wash and store all tableware and kitchenware.
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Attends all scheduled employee meetings and brings suggestions for improvement.
  • Performs other related duties as assigned by the Project Manager.
  • Assists at depots and stops with the safe loading and unloading of passengers, assisting physically challenged and special groups by opening doors.                                               

Supervisory Responsibilities - This job has no supervisory responsibilities.

Summary: Provide friendly, responsive service to create an exceptional dining experience for all of our guests. Each server's primary objective is to provide exceptional customer service and enhance the experience of Guest travel, in railroad dining car operated by the Alaska Railroad.

Essential Duties and Responsibilities include the following. Other duties may be assigned.

  • Welcome and greet guests. Make all our guests feel comfortable and let them know you're there to personally take care of them.
  • Fully educated on all menu items including food, beverage, alcohol, and grab & go
  • Inform guests of specials and menu changes.
  • Make recommendations you genuinely feel your guests will enjoy.
  • Answer questions about our food, beverages and other restaurant functions and services.
  • Take food and beverage orders from guests, enter orders in our point-of-sale system which relays orders to the kitchen and bar.
  • Deliver food and beverages from kitchen and bar to guests in a timely matter.
  • Removes dishes from table and carries them to kitchen
  • Washing dishes
  • Places clean linen, silverware, and glassware on table.
  • Receives and stores linen supplies.
  • Prepares and serves mixed drinks.
  • Perform side work at the start and end of each shift as required by service station assignment.
  • Maintain clean service areas.
  • Monitor and observe guests dining experience. Ensure guests are satisfied with the food and service. Respond promptly and courteously to any requests.
  • Prepare final bill, present check to guest, accept payment, process credit card charges or make change (if applicable).
  • Be ready and willing to assist fellow servers as situations arise.
  • Thank guests for their visit and invite them to return.
  • Be available to fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the Project Manager or immediate supervisor.
