    Summary: Supervises and coordinates activities of onboard food service staff.

    Education and/or Experience
    Five years food service experience in a restaurant or banquet setting, with two years supervisory experience.

    Language Skills
    Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals
    Ability to write routine reports/orders
    Ability to speak effectively before customers

    Mathematical Skills
    Ability to add, subtract, and calculate figures and amounts such as discounts

    Other Qualifications
    Work long hours on moving railcar, travel 50%+ of the time.

  • Food Service Trainer and Q/A - Alaska Railroad

    Human Resource Functions

    • Assist in final selection of team members, active in their pre-season training.
    • Ensure all service expectations are met on a day to day basis.
    • Ensure all uniform and grooming standards are met.
    • Stays overnight in Fairbanks on occasions.
    • Trains associates; plans, assigns, and directs work.
    • In the event of a crew member failing to show, the OBT will be responsible for that person's station.
    • Fully assist the crew during busy meal times.

    Financial Resource Functions

    • Assists in the daily ordering and par maintenance functions.

    Food and Beverage Functions

    • Rides trains to insure all recipes and plating are according to set expectations.
    • Reports back to management with ordering and/or stocking issues.
    • Works with OBM to maximize food service flow.
    • Assures that all Quality Assurance forms and standards are met in full.
    • Assists in a Manager function when necessary in the ESS warehouse; this may be an opening or closing shift. Will assist in prep kitchen when necessary.

    Safety Resource Functions

    • Works with Project manager to insure all daily safety reporting is accomplished
    • Works with Safety Director in Accident investigation
    • Assists at depots and stops with the safe loading and unloading of passengers, assisting physically challenged and special groups by opening doors, operating chair lift, etc. Provides assistance with crowd control.

    Supervisory Responsibilities
    Directly supervises up to 10 employees. Carries out supervisory responsibilities in accordance with the ESS/AKRR policies and all applicable laws.

    • Effectively utilizes POS System and troubleshooting
    • Assist in the daily cash reporting functions
    • Issue daily banks and insures accuracy
    • Oversee night stocking to meet quality, par, time requirements
    • Frequently rides trains to insure proper cash handling and trip end reporting

Additional PPE and certifications are required for these duties.

    Summary Responsible for all product that comes into and goes out of kitchens.  Accurately and efficiently cook meats, fish, vegetables, soups and other hot food products as well as prepare and portion food products prior to cooking. Also perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.
     
    Qualifications 
    Professional cooking experience is required. To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.     • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
    • Portions food products prior to cooking according to standard portion sizes and recipe specifications.
    • Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, saut'e burners, convection oven, flat top range and refrigeration equipment.
    • Uses our Standard Recipe Card for preparing all products. Do not rely on the memory of yourself or other employees.
    • Prepares item for broiling, grilling, saut'eing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
    • Follows proper plate presentation and garnish set up for all dishes.
    • Handles, stores and rotates all products properly.
    • Assists in food prep assignments.
    • Wash and store all tableware and kitchenware.
    • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
    • Attends all scheduled meetings and brings suggestions for improvement.
    • Performs other related duties as assigned by the management team.
    • Assists at depots and stops with the safe loading and unloading of passengers, assisting physically challenged and special groups by opening doors, operating chair lift, etc. Provides assistance with crowd control.

    Summary: Provide friendly, responsive service to create an exceptional dining experience for all of our guests. Each server's primary objective is to provide exceptional customer service and enhance the experience of Guest travel, in railroad dining car operated by the Alaska Railroad.

    Essential Duties and Responsibilities include the following. Other duties may be assigned.

    • Welcome and greet guests. Make all our guests feel comfortable and let them know you're there to personally take care of them.
    • Fully educated on all menu items including food, beverage, alcohol, and grab & go
    • Inform guests of specials and menu changes.
    • Make recommendations you genuinely feel your guests will enjoy.
    • Answer questions about our food, beverages and other restaurant functions and services.
    • Take food and beverage orders from guests, enter orders in our point-of-sale system which relays orders to the kitchen and bar.
    • Deliver food and beverages from kitchen and bar to guests in a timely matter.
    • Removes dishes from table and carries them to kitchen
    • Washing dishes
    • Places clean linen, silverware, and glassware on table.
    • Receives and stores linen supplies.
    • Prepares and serves mixed drinks.
    • Perform side work at the start and end of each shift as required by service station assignment.
    • Maintain clean service areas.
    • Monitor and observe guests dining experience. Ensure guests are satisfied with the food and service. Respond promptly and courteously to any requests.
    • Prepare final bill, present check to guest, accept payment, process credit card charges or make change (if applicable).
    • Be ready and willing to assist fellow servers as situations arise.
    • Thank guests for their visit and invite them to return.
    • Be available to fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the Project Manager or immediate supervisor.
    • Assists at depots and stops with the safe loading and unloading of passengers, assisting physically challenged and special groups by opening doors, operating chair lift, etc.Provides assistance with crowd control.
    • Must be willing to substitute in at other, local ESS units on days off when needed

    Summary: Actively manages onboard operations and support functions involved with the Alaska Railroad Project, and assists Project Manager in the successful execution of all contract functions.

    Qualifications: 
    To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The position schedule will require flexibility, particularly between the months of May and September. During that time, this position will have shift between 10 and 14 hours, possibly during the weekend, and possibly night shifts.     •Works with Project manager to ensure all daily safety reporting is accomplished
    •Works with Safety Director in Accident investigation

    Supervisory Responsibilities 
    Co-supervises staff of nearly 100 employees in food service. Is responsible for the overall direction, coordination, and evaluation of these units. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

    Other Qualifications 

    Work long hours on moving railcar, travel 25% to 50% of the time.
    Ability to work nights and weekends, and a flexible overall schedule, during summer operation

    Certificates, Licenses, Registrations: TAPS, Alaska Food Workers Card, ServSafe Overrides a food worker Card.
    Education and/or Experience 
    Three years Supervisory experience, two years cash handling and/or data entry experience
