General Description:

Experienced High Volume Production Cook. Strong commitment to quality, reliable, teamwork oriented , and highly skilled. Maintains a positive and professional attitude in our fast-paced work environment.      

Essential Duties & Responsibilities:

  • Ability to organize work and be able to meet or exceed production standards and work-loads for this position
  • Consistently follows local and State Health department codes and requirements.
  • Reliable attendance and punctuality.
  • Strong sense of urgency with proven ability to meet timelines.
  • Ability to multi-task in a high-volume kitchen.
  • Maintains positive attitude in high stressful situations.
  • Banquet and Line cook preparation experience preferred.
  • Strong oral communication skills.
  • Understands Culinary terminology.
  • Ability to follow established recipes and menu presentations.
  • Plate food per established procedures using proper portion control.
  • Ability to follow detailed directions.
  • Assist Chef with food inventory procedure.
  • Maintains high standard of cleanliness of work area.
  • Performs opening and closing procedure standards of expectations.
  • Communicates supply needs.
  • Must be available to work all weekends and holidays during the Emerald Downs live racing season.

Special Requirements:

  • Must posses a minimum of 5 years working in a high production kitchen operation.
  • Serve safe certified preferred.
  • Must comply at all times with company policies including uniform, appearance, and behavioral expectations.

Work Environment, Communication & Physical Abilities: Production Cooks encounter or are exposed to: Heated dishes, varying degrees of temperature, noise, water, wet working conditions and sharp tools.

Must be able to meet the physical requirements of this position, including, but not limited to: Standing and walking for a minimum of eight hours (8 hrs.) a day. Lifting to fifty pounds (50 lbs.) at or above shoulder height on a regular basis. Using a variety of body movements such as twisting, bending, stooping, reaching, pushing, and pulling. Using sight and hearing abilities in normal ranges.
