  • Line Cook

    108 Taphouse & Burger Bar

    Our Line Cooks at 108 Taphouse & Burger Bar are the backbone of the restaurant. They are responsible for setting up and stocking food items and other necessary supplies. Line Cooks prepare food items by cutting, chopping, mixing, and preparing sauces. Key cooking responsibilities include grilling, drying, sautéing, and other cooking methods to specified recipes and standards in cooperation with the rest of the kitchen staff to ensure that food comes out simultaneously. Everything must be completed and served in high quality and in a timely fashion.

    Duties include:

    • Set up workstations with all needed ingredients and cooking equipment
    • Answer, report and follow Executive Chef or Sous Chef instructions
    • Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)
    • Cook food in various utensils or grillers
    • Check food while cooking to stir or turn
    • Ensure great presentation by dressing dishes before they are served
    • Keep a sanitized and orderly environment in the kitchen
    • Ensure all food and other items are stored properly
    • Ensuring food is fully cooked before plating and serving to guests
    • Following a high level of sanitary protocol always
    • Check quality of ingredients
    • Perform inventory checks, complete food storage logs, and communicate to supervisor when there are shortages

    Requirements:

    • High School diploma or equivalent is required; diploma from a culinary school is preferred.

    • Experience in using cutting tools, cookware, and bakeware
    • Knowledge of various cooking procedures and methods (grilling, baking, boiling etc.)

    Bar Harbor Ale House

    We are searching for a diligent Busser to assist and support our serving staff at the Bar Harbor Ale House restaurant in Ketchikan, Alaska. As a Busser, you will be responsible for cleaning, clearing, and setting tables, ensuring that the restaurant supplies and equipment are clean and maintained, and assisting customers with requests or complaints.

    Duties Include:

    Our Craft Bartenders are held to a high standard as they are responsible for mixing, garnishing, and serving alcoholic and non-alcoholic drinks according to company specifications and recipes for guests at the bar and in the restaurant.     We are looking for a Dishwasher to join our kitchen staff at the Bar Harbor Ale House to maintain cleanliness around our restaurant.

    Dishwasher responsibilities include collecting used dishes, plates, and utensils, loading washing machines and stacking washed items appropriately.     Bar Harbor Ale House

    The Host or Hostess at Bar Harbor Ale House are the first staff members that our guests will interact with as they enter the restaurant. Host/Hostess must greet and welcome all customers and ensure that they are seated and receive attentive service.

    Bar Harbor Ale House

    The role of the Server is to support the Management Staff and work with the rest of the front-of-house staff. Servers will be responsible for providing an enjoyable experience for the guests and be the main point of communication with the kitchen and bar. They engage in friendly conversation with their tables to make them feel comfortable and provide a hospitable environment, delivering food on time and at the correct temperature. Maintaining cleanliness in the restaurant is pivotal, along with correcting any issues with meals.

    Duties Include:

    Duties Include:

    • Greet, register, and assign rooms to guests of Lodge
    • Verify customers' credit and establish how the customer will pay for the accommodation
    • Keep records of room availability and guests' accounts via computers
    • Compute bills, collect payments, and make change for guests
    • Perform simple bookkeeping activities, such as balancing cash accounts

    • Review accounts and charges with guests during the check-out process
    • Post charges, such those for rooms, food, liquor, etc. to ledgers using computers

    Cape Fox Tours is seeking an enthusiastic and professional Gift Shop Clerk to welcome all guests and assist in their needs pertaining to their visit to the gift store. Our stores are in Saxman (2-miles south of Ketchikan), the Southeast Alaska Discovery Center (Downtown Ketchikan) and the Cape Fox Lodge (on the hill overlooking Downtown Ketchikan). Duties include keeping the store appearance neat, removing litter and debris, handling retail purchases, stocking store merchandise and other duties as assigned.   

    The Gift Shop Clerk should have knowledge of commonly used Company concepts, practices, and procedures within the organization. Training will be provided. The Gift Shop Clerk will follow instructions and pre-established, commonly known guidelines provided to perform the functions of the position.

    Duties include:

    Ward Cove Food & Beverage Operations

    Join the fastest growing company in Ketchikan, Alaska as a Line Cook for the Ward Cove Cruise Terminal operations! In this position, you are responsible for setting up and stocking food items and other necessary supplies. Line Cooks prepare food items by cutting, chopping, mixing, and preparing sauces. Key cooking responsibilities include grilling, drying, sautéing, and/or other cooking methods to specified recipes and standards. You must ensure that food comes out simultaneously. Everything must be completed and served in high quality and in a timely fashion.

    Duties include:

    • Set up workstations with all needed ingredients and cooking equipment
    • Answer, report and follow Executive Chef or Sous Chef instructions
    • Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)
    • Cook food in various utensils or grillers
    • Check food while cooking to stir or turn
    • Ensure great presentation by dressing dishes before they are served
    • Keep a sanitized and orderly environment in the kitchen
    • Ensure all food and other items are stored properly
    • Ensuring food is fully cooked before plating and serving to guests
    • Following a high level of sanitary protocol always
    • Check quality of ingredients
    • Perform inventory checks, complete food storage logs, and communicate to supervisor when there are shortages

    Requirements:

    • High School diploma or equivalent is required; diploma from a culinary school is preferred.
    • Proven experience as cook and strong desire to learn and grow as a cook
    • Experience in using cutting tools, cookware, and bakeware
    • Knowledge of various cooking procedures and methods (grilling, baking, boiling etc.)
    • Ability to follow all sanitation procedures
    • Ability to work in a team environment
    • Ability to work different shifts including nights, weekends, and holidays when needed
    • Must be reliable, customer service oriented and have very good communications skills
    • Excellent physical condition and stamina

  • Service Staff

    Ward Cove Food & Beverage Operations

    Our Service Staff are held to a high standard as they are responsible for performing a combination of bartending, serving, and hosting duties. This position is located at the Ward Cove Cruise Terminal where thousands of cruise ship guests come through during their Ketchikan port call. You will be responsible for greeting and assisting guests with orders and menu questions; pouring and serving alcoholic and non-alcoholic drinks according to company specifications and recipes; cleaning and restocking food and drink items in between the passing crowds of visitors.

    Having exceptional customer service is a vital role to doing the job in the best manner possible and representing the company. Maintaining personal and professional safety and hygiene standards is crucial. Embodying the ability to work within a team setting and adapt to various changing environments is also necessary. We are willing to train the right candidates.

    Duties Include:

    • Prepare alcohol and non-alcohol beverages for patrons
    • Interact with customers, take orders, and serve
    • Answer any questions or suggest items on the menu based on the customer’s preferences
    • Upsell and highlight the restaurant’s food and beverages
    • Take payment
    • Communicate orders with the kitchen staff
    • Restock and replenish bar inventory and supplies
    • Stay guest focused and nurture an excellent guest experience
    • Clean tables or counters after patrons have finished dining
    • Prepare hot, cold, and mixed drinks for patrons, and chill bottles of wine

    Requirements:

    • Prior experience working in an airport/cruise line terminal as a bartender or server is preferred

  • Service Supervisor

    Ward Cove Food & Beverage Operations

    We are looking for a Service Supervisor to oversee all operations for the Ward Cove Cruise Terminal in Ketchikan, Alaska. Pay is determined based on experience. This position requires someone with a self-starter mindset with exceptional customer service and communication skills. Leadership starts with you creating a memorable experience for the thousands of cruise ship guests passing through daily. Primary responsibilities include delegating tasks to service staff, addressing concerns made by customers, ensuring compliance with all safety and sanitation regulations. They will also assist in serving, bartending, cleaning, and greeting when needed. If you have excellent organizational and team management skills, along with experience in the food industry, we would like to meet you.

    Duties Include:

    • Ensuring that the operations are performed properly in the result of a GM not being present
    • Ability to use effective management skills and communication to address staff
    • Use the proper disciplinary actions to address poor staff performance
    • Manage service staff’s work schedules
    • Conduct regular inspections of the kitchen to ensure standards of sanitation are maintained
    • Oversee food preparation, presentation, and storage to ensure compliance with food health and safety regulations
    • Checking in on dining customers to enquire about food quality and service
    • Monitor inventory and ensure that all food supplies and other restaurant essentials are adequately stocked
    • Monitor the restaurant’s cash flow and settling outstanding bills
    • Review customer surveys to develop and implement ways to improve customer service
    • Resolve customer complaints in a professional manner
    • Perform additional duties as assigned

    Requirements:

    • Experience as a Lead or Supervisor in the Restaurant industry is preferred
    • Fundamental understanding of the expected service and flow of operations for the front-of-house and overall Restaurant to be successful
    • Knowledge of Point-of-Sale systems, and money handling for processing transactions
    • Team leader with effective communication skills and customer service oriented
    • Ability to work under pressure, multi-task, delegate tasks, and instruct staff members
