Seasonal Professional - Experienced Breakfast / Lunch Cook

The Vermilion Valley Resort is located deep in the Sierra Nevada on Edison Lake and caters to the Pacific Crest & John Muir Trail hikers as well as the fishermen and campers who fish for the trophy German Browns and Rainbow trout.

Employees live and work on-site in this beautiful part of the Sierra National Forest, located 80 miles from Fresno on the edge of the John Muir Wilderness.  Employees must be able to thrive at 7700’ in elevation, work through Labor Day (some positions can go into mid Oct), and work and play well with others. The Vermilion Valley resort is rated #1 stop on the JMT by Backpacker Magazine and is a top layover spot for PCT thru-hikers which requires our staff to have excellent customer service skills, a positive attitude and an enthusiastic approach toward cooking.

We need an experienced cook to work with two other cooks this summer to feed all our hungry hikers and a staff of 12. Hearty, fresh home-style food is what we serve. Our meat and vegetables are sourced locally and we give creative license to our cooks. We are known up and down the trail for our good grub, including fresh baked pies, our Saturday night BBQs, and hearty breakfasts. We are a close- knit staff and have a lot of fun, but we work hard during the season. If you are into an off-the-grid challenge we may be a good fit. Work weeks are 40 hours and we insist that you take two days off a week. Our breakfast/lunch shift serves 60 - 70 plates and our dinner shift can do 80 - 90. Experienced wait-staff are also needed. The Vermilion Valley Resort features a restaurant, store, motel, tent cabins, yurts, water taxi service and marina.

 Qualifications desired: This position begins in late May and will go into Sept/Oct. You must be able to create and prepare family-style meals for 60 80 guests. Breakfast and lunch are off a menu, dinners are 3 - 4 choices created by the Chef/Cook on duty. Our cooks work closely with the wait-staff to keep the café clean, stocked and orderly. You will also be responsible for maintaining the kitchen during your shift. The right cook is flexible and will handle either breakfast/lunch shifts and occasionally the dinner shift. You will report to our experienced Chef Jason Moores. Our employees take ownership and pride in their positions which requires a good can-do attitude.
