Year-Round Professional - Restaurant Manager

Xanterra South Rim LLC is seeking an experienced F&B professional for our opening as manager of our fine dining restaurant at the rim of the Grand Canyon.

 

Job title:              EL TOVAR RESTAURANT MANAGER

Reports to:         Assistant Food & Beverage Director

Basic function:  Oversee and manage the front of the house operations of the El Tovar Dining Room, room service, banquets, mezzanine, lounge and advance reservations.

Duties & Responsibilities:

  1. Work closely with the Executive Sous Chef and Sous Chefs to maintain a professional operation, ensure product quality and plate presentations.
  2. Maintain labor costs in accordance with financial plan, seasonal business levels, and special events.
  3. Oversee the regular dining room service to ensure professional operation and consistently high quality of service
  4. Work with the Food & Beverage Trainers to administer a comprehensive training program for Food & Beverage Servers, Dining Room Bussers, Host/Hostess, Cocktail Servers and Bartenders.
  5. Work with Food & Beverage Assistant Managers on continual management training.
  6. Counsel with Food & Beverage Assistant Managers for recommendations and approval of all promotions for the dining room and lounge.
  7. Review and approve all annual reviews for the hourly employees.  Consult with Assistant Food & Beverage Director on the annual performance reviews for El Tovar Assistant Managers.
  8. Conduct corrective action as necessary and approve all corrective action administered by El Tovar Assistant Managers.
  9. Approve all change of status forms effecting El Tovar front of house staff.
  10. Oversee and approve schedules for all El Tovar front of the house positions keeping scheduling in line with labor budget and standard hours while meeting the needs of the business.
  11. Supervise all monthly inventories.
  12. Responsible for the maintenance of sanitation standards for the dining room, lounge and front of the house in accordance with GCNPL, National Park Service and Serve Safe standards.
  13. Responsible for establishing and overseeing side work duties, special opening and closing duties for front of the house staff.
  14. Responsible for all VIP reservations for El Tovar dining room.
  15. Responsible for shift meetings communicating specials and other pertinent information to staff.
  16. Ensure that assigned staff is adhering to risk management procedures, including wearing personal protective equipment, MSDS location and comprehension, ergonomics and slip and fall.
  17. Project a commitment to Grand Canyon National Park Lodges environmental policies.
  18. Other duties as assigned.

 

Desired Qualifications:

  1. Three years supervisory experience in high-volume fine dining establishment(s).
  2. Experience with and knowledge of all front of the house positions with the ability to quickly assess service situation(s) during the seating period(s).
  3. Ability to train and evaluate staff in the processes of fine dining service.
  4. Excellent verbal communication skills with the ability to effectively interact with a broad cross-section of guests, employees, government officials and company business clients.
  5. Knowledge of wines, wine service, wine selling techniques and ability to pass knowledge on to staff.
  6. Basic accounting skills for conducting inventories, scheduling staff and analyzing monthly P&L statements.
  7. Experience using Outlook, Word and Excel.
  8. Ability to pass ServeSafe food sanitation course and TIPS training.
  9. Experience with computerized POS systems preferably Aloha brand POS.
